Ingredients for Dry Fruit Thandai
Full cream milk – 1.5 litersSugar – 1.5 cupsAlmonds (soaked) – 20Cashews – 20Pistachios – 20Melon seeds – 3 tablespoonsSaffron – 7-8 strandsPoppy seeds – 3 tablespoonsGreen cardamom – 7-8Cinnamon – 1 pieceBlack peppercorns – 5-6Dry rose petals – 2
Method to Make Dry Fruit Thandai
To make Dry Fruit Thandai, take a heavy-bottomed pan and pour milk into it. Heat the milk on medium heat. While the milk is heating, grind almonds, poppy seeds, cashews, pistachios, and melon seeds into a paste. When the milk starts to boil, add saffron and sugar. Mix well until the sugar dissolves. Then, crush the dry rose petals, black peppercorns, and green cardamom into a powder.
Now, add the prepared dry fruit paste to the milk and mix well using a whisk. Cook the milk on low heat, stirring occasionally with the whisk. Once the milk is infused with the flavors of spices and dry fruits and has thickened slightly, turn off the heat. Allow the Thandai to cool down to room temperature. Once the heat from the Thandai dissipates, refrigerate it for half an hour.
